Recipe idea: beetroot carpaccio

Fresh, healthy and delicious - with the Jupiter disc grater!

Ingredients:
- a large, raw beetroot
- some arugula
- 50g goat cheese
- 20g walnuts
For the dressing:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- ½ tsp mustard
- ½ tsp salt
Here's how:
Wash the beetroot thoroughly and then grate it into fine slices using the Rasputin grater. Also grate the goat cheese using the same grater.
If you do not own our Rasputin disc grater, you can also prepare the carpaccio with the smooth blade of our hand-held all-purpose slicer.
Place all the dressing ingredients in a container and briefly blend with an immersion blender. Then arrange the beetroot, arugula, and goat cheese on a platter and garnish with the dressing.
